Carrot noodles with vegetables & salmon

Not sure if I mentioned before, but I try to avoid cooking porridge for Bryan during the weekends – when I am his sous chef of course.

So this is another item that I found in the store – Organic Carrot noodles.

It looked and taste a bit like “wan tan mee” but I think is more healthier cause it has carrot extract in it. It also have no egg, so you can also feed it to smaller babies.Only note is that it has salt added to it. So what you need to do is to boil the noodles separately, and rinse with water. If you are serving to older children, you may want to rinse with cold water to give the noodles a springier texture. Otherwise, you can boil till soft (overcook) and rinse with hot water again, to wash away the salty taste.

For the sauce, I sauteed some chopped garlic & onions in olive oil. Then i add in brocolli, cauliflower and carrots. Stir fry for a few moments, then add some tomato puree and water. Simmer until the vegetables are soft. For protein, I add some canned salmon flakes when the sauce is almost ready. You can also add some cheese as kids tend to like cheese.

This dish is really simple to prepare. It takes me less than 30 mins from beginning till end to prepare this dish. But the most important part is – Bryan loves it!

Cheesy pasta with vegetables

I have been starting to introduce Bryan to “whole” foods. Maybe i am using the wrong term here, but i am referring to food that are not mashed up and mixed alltogether in porridge or pasta.

Today I cooked soup using pumpkin, carrot, brocolli and cauliflower with pork. I took out the vege when they are done and roughly cut into pieces. In a separate pot, i cook vegeroni pasta, strain and then add some of the soup to the pasta.

Cooked for a little while to let the pasta absorb the soup’s taste and to soften it further. Lastly, i put in half a slice of cheddar cheese.Results – Cheesy pasta with vegetables

When i feed Bryan, i try to feed different food separately so that he can enjoy the different textures.

There were extra soup left, so I serve that to him in between bites.

He loved the soup, and he tried to say “soup” , but all that came out was “ssssss….” :)
